Watermelon Fruit Salad (with something a little different!)

There is nothing like this amazing cool salad on a warm summer day. It showcases the best of the season with ripe watermelon, strawberries and tomatoes, while adding that touch of the Mediterranean with the salty feta and olives. I first made this salad for a Fourth of July cookout Sonja was having up in Malibu. She told me I could bring up to two dishes, knowing that I wanted an excuse to try new recipes. Of the two, this one was GONE in minutes.

½ watermelon cut up in large cubes

1 block Vio Life Vegan feta (or the real thing!)

1 c sliced Kalamata Olives

1 package grape or cherry tomatoes sliced (whatever is fresh and ripe!)

2 T chopped fresh mint

2 T chopped fresh parsley

1 package strawberries sliced

For the dressing:

½ c Basil flavored Olive Oil

3 T Fig flavored Balsamic Vinegar

S&P to taste

Mix together all ingredients except for the cheese and dressing in one bowl. Wisk together dressing ingredients separately. If taking to a cookout or something, don’t dress until you get there. Also add the cheese when you get there too. If keeping at home for the week, you can add it all and put in the refrigerator. When you’re ready to eat it, let sit at room temp and stir because the dressing will have solidified slightly in the chill. It’s that easy!
