Salmon al Cartoccio (with green beans, tomato and basil pesto)

This recipe is so fresh and easy to make! Perfect for a Summer weeknight meal. I usually have individually packed frozen salmon fillets and pull one out for a weeknight meal, but you can buy fresh salmon and cut that up for each family member as well. I get mine from whole foods, but I think Costco has it as well.

Each meal is packed up into one wrapping portion and you can cook them all at the same time in their individual wrappers.


What you’ll need per person:

1 salmon fillet - I like to buy smaller oz fillets (like 3-4) and load up on the veggies, but you can do whatever you want here!

12 cherry tomatoes

12 green beans

2-3 T fresh pesto

Tin foil


Preheat oven to 350 degrees. Cut tin foil up so you can hold the fish and the veggies. Place the fish in the middle of the tin foil. Surround the fish on both sides with the veggies. Spoon the pesto over the fish and the veg. S&P the whole thing to taste. Wrap it all up like a sandwich and make sure it’s air tight, and place onto a cookie sheet. You can fit at least 2 per sheet. Once the oven is ready, pop it in and cook for about 20 minutes or until the fish is ready. The house will start to smell amazing!

Let them cool a bit, then transfer all ingredients onto a plate and it’s ready to serve!


This cooking method is called Al Cartoccio. It’s a method of cooking in which the food is put into a folded pouch or parcel and then baked. This method is most often used to cook fish or vegetables, but lamb and poultry can also be cooked this way as well.

This is a great idea! I am getting a lot of basil and am looking for ideas for pesto! Thanks, Angela. I wonder if I could substitute green beans with asparagus.

yes you can! I do sometimes too! I would recommend to shave off the ends to they aren't too tough first.
