This salad is such an easy go-to for meal prep during the week. I love to have a salad on hand for lunches, sides to meals etc, and this one stands up to the week with the heavier bitter lettuce types. The lemon and mint give it a summertime tang and sweetness, and if you opt for some of the additions below, you could serve this at any dinner party!
1 small head Radicchio sliced thin
2-3 Endive also sliced thin
1 medium bulb Fennel sliced thin
1-2 stalks Celery thinly sliced
2 T chopped Italian Parsley
2 T chopped Mint
Lemon vinaigrette
Juice of one lemon
½ EVOO
S&P to taste
Combine all ingredients in a bowl. Wisk together dressing ingredients and drizzle over for a crisp bitter lemony fresh summer salad.
Additional options: diced tomato, dried cranberries, blue cheese crumbles. I also like to add chopped kale for extra vitimans!
