Huevos Rancheros?

I know, I know. You’re thinking, this isn’t an Italian dish! You’re right. It’s not. But it’s one of my favorite breakfasts ever and I’ve managed to make a somewhat healthy version that I think is so delicious I had to share it with you all! Living here in Southern California we have access to the best produce all year round. We’re lucky that way. So when you have that access to fresh cilantro and avocado, you eat it! Typically ranchero sauce is the key to this recipe, but I've switched it to use only fresh salsa to keep it fresh and lighter. I also use a LOT less cheese, and subbing for Vegan cheese makes it even healthier. So maybe I should call it something else? "Angela's light and healthy Mexican influenced breakfast"? That's a mouthful!


The recipe below is for one serving made to order. You can increase it very easily for a family of four etc, with little effort.


2 eggs (I like to fry them sunny side up with avocado oil spray, but to make it even healthier, poaching them is the way to go!)

1 can black beans

3 T fresh salsa (hot or mild, it’s up to you!)

Fresh cilantro for garnish

½ avocado

2 corn tortillas

2-3 T shredded cheddar (or Violife vegan shreds)

Hot sauce optional for drizzling on top


I heat up the tortillas right on my gas burner to get them warm and I like a little char. They have a grilled flavor that brings out the corn, and is so much yummier! Then I drain and rinse the black beans and warm up in a small pot on the stove adding in 2 T of the salsa and stir it until it’s warmed up. Take the warm black beans and top a few spoonful’s over the tortillas and sprinkle on the cheese. I put this on broil in the toaster oven just until the cheese melts a little. While this is happening I heat up my pan to make the eggs, and slice up the avocado. Once the cheese is melted I plate the tortilla/bean/cheese concoction and add more salsa on top of that. Once the eggs are cooked to your liking, place them on top and add chopped cilantro and avocado slices. Drizzle a little more hot sauce of you like and it’s done!


If you’re only making one dish, you’ll have leftover salsa, cheese, tortillas, and beans, great for making nachos!
