Homemade Pasta

Here it is! The way I learned how to make pasta when I was just 10 years old. And if that little girl can do it, so can you! Some people make it with a food processor, but I use a pasta machine. I like doing it that way not only for tradition, but you can get the feel of the dough better too.


Ingredients

Generally the ratio is one cup flour to one egg.

Dinner for four is 2/2

For a feast of 10 people is about 5 cups flour/5 eggs

Have a little water on stand-by to add to the dough.


On a clean counter, put the flour in a mound and make a well in the middle. (Just like you would for adding gravy to the middle of mashed potatoes.) Crack the eggs into the well, and with a fork start beating the eggs, and slowly add in the flour as you go until it’s ready to work with your hands.


Start kneading the dough with your hands until it’s a good consistency for a pasta dough, adding a little water (like a teaspoon) here and there as needed to loosen it up. About 10 minutes. Put the dough in a bowl and cover for at least 30 minutes.


Cut into large pieces and start rolling the dough into long pieces. Use the lasagna setting on the machine at the thickest setting and crank through the dough. Cut the dough in half so it’s not so long (about regular pasta length), then shorten the thickness setting about 2 more so it’s mid thickness and crank it through again. Then do this on second to thinnest setting and crank through. As you go through these settings make sure your dough is floured so it doesn’t stick to the counter. Once all your pasta goes through to thin it out, then use the spaghetti or fettucine cut and crank all the dough through. After each piece goes through make sure it’s floured so it doesn’t stick. Some people use pasta dryers for hanging, some hang a broom up horizontally and dry it that way. I think if you have enough flour on it and spread it out on the counter, it will dry.


You can refrigerate your pasta for a day in a Ziploc bag, or freeze it up to a month.

When you go to cook it, it will only take 2-3 minutes.
