This salad is an All-American favorite! It’s a little lighter, and has a kick -nothing pickle in here either! It’s craveable and the perfect accompaniment to any cookout this summer! Light Sour Cream and Veganese help it make it a little healthier, plus it’s SO easy to make, you can make it in the time you need to cook the pasta and cool it.
Ingredients:
3-4 green onions sliced thin
1 red bell pepper finely diced
2 roma tomatoes diced
1 box elbow macaroni
½ c Light Sour Cream
½ c Veganese
S&P to taste
How to:
Cook the elbow macaroni to box instructions and cool off while slicing the veggies. Mix all the ingredients together in a bowl and hit it generously with salt and pepper! That’s it!
